So we have more than one bacon lover in this family. That's why I'm always looking for new recipes that use bacon.

This one is pretty unique in that it's used as a condiment. In fact, I'm planning to try it on everything from venison steak to my sourdough discard crackers.

Crisp, salty bacon combined with the sweet maple flavor we all love plus the subtle flavor of bourbon makes this an excellent topping for grilled meats, but that's not all.

Maple Bourbon Bacon Jam is a delicious treat on top of your favorite burger, steak or even baked boneless short ribs.

Or spread it on a breakfast sourdough tortilla instead of traditional bacon slices. We sometimes do this with my onion relish recipe for canning as well - so good.

You could add a dollop to the top of deviled eggs, or even add it to your charcuterie board. Spread it on pancakes, grilled cheese, or toast. You could even spoon it into scrambled eggs.

Honestly, it's pretty good on any of your favorite griddle breakfast recipes. On holiday weekends I'll add it to our summer barbecue dinner spread alongside my pickled red onions.

This is a pretty easy recipe.

First, cut bacon into small pieces using kitchen scissors.

Then place bacon in a medium-sized cast iron saucepan over medium-high heat. Stir occasionally until it's cooked thoroughly but not overcooked.

Remove the bacon from the pan and drain on a plate lined with paper towels.

Drain all but a couple of teaspoons of bacon fat and then add in all remaining ingredients.

Next, simmer the mixture over low heat for about 10 minutes, stirring occasionally, until the mixture thickens to the consistency of jam.

Remove from heat and stir in cooked bacon.

Allow it to cool and transfer into an 8 oz. jar or two 4 oz. jars.

Wipe off the rim of your jar and replace the lid.

This bourbon maple bacon jam stores well in the refrigerator for up to four weeks.
