Ingredients
  

  • ¾ pound bacon
  • 2 teaspoons crushed garlic
  • ½ cup light brown sugar
  • ¼ cup maple syrup
  • ¼ cup bourbon
  • ¼ cup apple cider vinegar
  • 1 ½ teaspoons mustard

Instructions
 

  • Cut bacon into small pieces using kitchen scissors.
  • Place bacon in a medium-sized saucepan over medium-high heat.
  • Stir occasionally until it is cooked thoroughly but not overcooked.
  • Remove bacon from the pan and drain on a plate lined with paper towels.
  • Drain all but a couple of teaspoons of bacon fat and then add in all remaining ingredients. 
  • Simmer over low heat for about 10 minutes, stirring occasionally, until mixture thickens the consistency of jam.
  • Remove from heat and stir in cooked bacon.
  • Allow to cool and transfer into an 8 oz. jar or two 4 oz. mason jars.
  • Wipe off the rim of your jar and replace the lid.

Notes

This maple bacon bourbon jam stores well for about four weeks in the fridge.
