Everyone loves soft, sweet buns with dinner at our house. And they're just the thing to serve alongside all the soups, stews and chilis we eat.
So I was thrilled with how this condensed milk dinner rolls recipe turned out.
Baking in an off grid kitchen
If you've been following me for any length of time, you know that I love to bake. And many of the recipes I use and/or develop began long before we moved off the grid.
In fact, I've always found baking a great stress-reliever. So it's no surprise to me that news outlets are reporting baking ingredients are flying off the shelves during this time of global lockdowns.
So many of these recipes used small kitchen appliances like a KitchenAid Stand Mixer, an electric egg beater, or a blender to speed things up. Heck, I even baked bread in a bread maker for years!
And confession time: I LOVE my KitchenAid Stand Mixer, a birthday gift from some of my big kids. It makes certain recipes like homemade marshmallows much quicker and easier to prepare.
However, it uses a lot of electricity. So I only use it when 1) the generator is on or 2) if it's very sunny and the solar panels are charging well.
It's the perfect homestead kitchen tool to make these delicious Condensed Milk Dinner Rolls.
Ingredients for this condensed milk dinner rolls recipe
For the dough:
3 ¼ cups all-purpose flour
1 tablespoon instant yeast
½ teaspoon salt
1 cup milk, room temperature
½ cup condensed milk
1 large egg
2 oz unsalted butter, cut into cubes, room temperature
Egg wash:
1 small egg
1 tablespoon milk
Condensed milk glaze:
3 tablespoon condensed milk
1 tablespoon butter, melted, room temp
For greasing:
1 oz butter, room temperature

How to make condensed milk dinner rolls
Sift flour through a fine sieve mesh into a mixing bowl
Add the rest of the dry ingredients into the bowl
Using a dough hook for your stand mixer, on slow speed, add egg, milk, and condensed milk to the dry mixture.
And then mix until a sticky dough starts to form. This takes about 1 minute.
Kneading without a stand mixer
Alternatively, use a wooden spoon to mix it well. Generally, it takes me about three to four minutes of vigorous hand mixing to get the dough to the consistency I like.
Use a rubber spatula to scrape down the sides of the bowl if needed. Don't want any floury bits in your buns!
Increase your stand mixer speed to medium-low. Then add butter, one piece at a time, and mix until butter is fully mixed in.
Whether you're doing it the old-fashioned way (by hand) or not, keep on mixing that dough!
It should be smooth yet still elastic, and this takes about 2 minutes with a mixer.
Make sure there is no dry flour remains on the bottom of the mixing bowl. And remember, condensed milk dinner rolls dough should be sticky.
So whatever you do, don't add more flour to the mixture just because the dough feels a bit wet.
Next, move the dough to a lightly greased large mixing bowl. and Using your hand, keep kneading the dough a few more times to form a smooth round ball.
Tips for kneading
Use your fingertips and gently lift and fold the edge of the dough that's farthest away from you toward the middle. Then simply turn the bowl a few times and repeat those steps.
Next, turn the smooth dough seam side down. Cover the bowl tightly with plastic wrap and let the dough rise until it is double in size, (about 1.5 to 2 hours).
Do not rush this yeast proofing process or you’ll end up with heavy, dense rolls instead of light and fluffy rolls!
Meanwhile, grease your baking pan with butter.
When the dough is ready, punch it down. You'll feel it deflating. Treat the dough gently! Carefully move it to a lightly-floured counter or pastry board.
Then divide the condensed milk dinner rolls dough into nine equal pieces.
How to keep dough soft
Work with one piece of dough at a time. Next, cover the rest with plastic wrap. This helps to keep it soft if you need some time to form each small dough ball.
Stretch the dough by using your fingers and pinch the edges together at the bottom to form a smooth dough ball.
Then place the dough seam side down back on the counter and use your hand to roll it into a ball.
Then transfer the round ball, seam side down, to an already greased baking pan. Repeat this step for the remaining pieces of dough.
And now it's time to arrange them in the pan then lightly cover with plastic wrap.
Let the unbaked condensed milk dinner rolls rise until almost double in size. However, make sure they don’t rise above the rim of the pan.
Preheat your oven to 340F.
Gently brush dinner rolls with egg wash mixture and bake from 25 to 30 minutes, turning the pan after about 12 minutes to ensure even baking.
Your condensed milk dinner rolls should have a deep or bright golden-brown crust, depending on your preferences.
And when the rolls are done baking, take them out and let them cool in the pan for 5 minutes at room temperature.
Next, lightly brush a layer of condensed milk glaze on top of the rolls when they're still warm.
Then let them cool down for another 30 minutes to an hour before serving. Serve these rolls warm or at room temperature with your favorite family recipe.

Ingredients
- For the dough:

- Turn the smooth dough seam side down. Cover the bowl tightly with plastic wrap and let the dough rise until it has doubled in size. This takes about 1.5 to 2 hours.
- Grease your baking pan with butter.
When the dough has risen, punch it down. Then transfer it to a lightly-floured counter or baking board. - Divide the dough into 9 equal pieces.
- Working with 1 piece of dough at a time (cover the rest with plastic wrap) to form each small roll. Use your fingers to stretch the dough, pinching the edges together at the bottom and rolling it between your palms to form a smooth ball.
- Then transfer the dough ball,, seam side down, to the already greased baking pan.
- Repeat for the remaining dough balls, and arrange them in the baking pan.
- Lightly cover them with plastic wrap and let them rise again until almost double in size. Make sure they don’t rise above the rim of the pan.
- Preheat oven to 340F.
- Gently brush dinner rolls with egg wash mixture and bake from 25 to 30 minutes, rotating the pan half way.
- Your condensed milk dinner rolls should have a deep or bright golden-brown crust, depends on your preferences.
- Take the baking pan out and let the rolls cool down for 5 minutes at room temperature. Lightly brush a layer of condensed milk glaze on top of the rolls when they are still warm.
- Then let them cool down for another 30 minutes to an hour before serving. You can serve these rolls warm or at room temperature.

Hi Bedelia! I've never made this recipe with gluten free flour so I don't know how it would turn out. I have found, however, that substituting gluten-free flour for regular flour in my other recipes doesn't usually work well, I'm afraid. If you do give it a try, let me know how it turns out!

Can the dough be prepared in a bread machine using the "dough" setting? I often do this with a cinnamon roll recipe and it's a family favorite, it's nice to have the bread machine doing all the mixing and kneading 🙂

Hi Debra! They're best baked the same day, although if you do make them the day before, warm them in the oven at about 200F for 10 minutes. Enjoy!
