- 4 cups all-purpose flour
- 1 Tablespoon baking powder
- 2 teaspoons baking soda
- ½ cup granulated sugar
- 1 Tablespoon cinnamon
Combine all ingredients in the bowl of a stand mixer or you can whisk by hand. I prefer to toss them in the mixer and let it run for a few minutes on the lowest speed to be sure that everything is incorporated evenly.
Carefully scoop the mixture into clean, dry mason jars and pack it down.
Place the lid and ring on.

- Melt 1 Tablespoon of butter.
- Beat together 1 egg, ¾ cup milk and melted butter.
- Mix wet ingredients with 1 cup of pancake mix until there are no longer any lumps.
- Pour ¼ cup of the batter out per pancake.
- Cook over medium heat in an oiled pan or griddle.
- When bubbles actively forming, flip and cook the other side until golden.
