HOMEMADE VEGETABLE SOUP RECIPE

This harvest homemade vegetable soup recipe uses veggies you can easily grow in your garden or containers.

Ingredients

–Red onion –Celery –Carrots –Zucchini –Green peas –Canola oil –Tomatoes –Garlic –Dried oregano –Dried basil –Ground black pepper –Salt –Bay leaf –Broth - vegetable, chicken or beef –Water –Dried green lentils

Step 1

Saute vegetables in canola oil in a large dutch oven or stock pot until soft - about 10 minutes.

Step 2

Add all remaining ingredients except green peas.

Step 3

Simmer on low for 1 hour.

Step 4

Add green peas, simmer for 1 hour more.
