Are Fresh Blueberries or Frozen Blueberries Best for Pies?
If you have looked in your weekly ad circular or been in a grocery store lately, then you know that it is officially blueberry season. We forage for wild berries, including blueberries, cranberries, and wild raspberries on the land surrounding our home.
However, even if you can't go berry picking wherever you live, you can get fresh berries at the market. Blueberries are a good price right now and a healthy addition to everything from muffins to pies.
Frozen blueberries are also an option. I find that using frozen blueberries in pie recipes usually means I need to add a thickener to the filling.
My favorite way to use blueberries is by whipping up a delicious homemade blueberry pie at home. (This is also my kids' favorite way for me to use blueberries.)I try most recipes with fresh blueberries or frozen blueberries, depending on what's available.
However, I have found that in some cases I have to fiddle with homemade blueberry pie filling recipes because they can seem too runny. So I might add a thickener.

Best Thickening Agents for Blueberry Pie Recipes
Traditional blueberry filling recipes often call for as much as one cup of cornstarch. However, I'm not a huge corn starch fan. I don't like the flavour it adds to the blueberry pie filling.
Even if a recipe calls for a couple of tablespoons of cornstarch, I'll replace them with tapioca as a thickener, or even a couple of tablespoons of all-purpose flour.
Recently I've been replacing tapioca or flour with almond flour to thicken my pie fillings. Love the nutty flavour addition!
Pie Crust Recipe Tips for Classic Blueberry Pie
What's a good blueberry pie recipe without an awesome homemade pie crust recipe? The best pie recipes call for a homemade top crust and bottom crust.
For a really classic blueberry pie, make a lattice top with wide strips. Or instead of a lattice crust, make a graham cracker crust for a creamy blueberry pie or a custard-style berry pie recipe.
As an alternative to top pastry, try using a crumb topping for the top of the pie. Either a streusel mixture (similar to the topping for dutch apple pie) or even oatmeal for blueberry crumble pie. And for a golden brown pie pastry, use an egg wash before baking.
Having trouble with your blueberry mixture bubbling over the edge of the pie pan? Put the pie pan on a cookie sheet. You might want to try a pie shield if you find your pastry edges burning.
Remember, for a flaky crust your butter, shortening or lard should not be melting at room temperature. Otherwise, you could end up with some pretty tough pie dough. I keep mine in the fridge so it stays cool.
And if you're short on time, buy a store-bought pie shell.
Flavor Additions to Blueberry Filling
If you're looking to boost your best blueberry pie filling recipe, experiment with a few different flavours. In the past, I've tried
- lemon juice
- lemon zest
- orange juice
- one teaspoon cinnamon
- one teaspoon nutmeg
I've even added a tablespoon of peach schnapps to get that peach and blueberry flavor in my pie filling.
Sugar Free Blueberry Pie Recipes
might not need "one cup sugar " but will get sweetened with honey instead. Or a small amount of brown sugar.
I bake my pies in pans on a baking sheet in the oven to keep messes easy to clean up. I usually use a 9-inch pie plate. then cool the pie in the pie dish on a wire rack.
